Greg Smart, Fresh Madison Market’s Executive Chef

Hello Everyone,

I decided to write a brief introduction for myself in the hopes of giving people a better idea of how I came to be the Culinary Manager for Fresh Madison Market…

First of all, I am native of northern Wisconsin. I originally began college as a music major, but somehow I always found myself in a kitchen one way or another; campus food isn’t exactly thrilling, and I liked to have some variety.

It was in this way that I ultimately realized that my true passion was for the culinary art. I began training at the Valley River Inn and Sweetwaters in Eugene, Oregon. There, I began learning basic French technique within a Pan-Pacific and “fusion-cuisine” framework.

I also began mastering the skills of carving and the presentation of produce, chocolate, pulled sugar, and pastry.

While in Oregon, I combined my love for wine and food by putting together wine tastings for friends and attending local events as a personal chef. It must be said that, during this time, the area’s interest in organic and locally grown food (as well as its highly developed vegetarian and vegan cuisines) had a profound influence on me.

After my term at the Valley River Inn, I was offered the Assistant Chef position at Market of Choice – later becoming the Head Chef at two of their locations.

After so much time abroad, however, I decided to settle in Madison so I could be closer to my family. Since then, I have served as the Executive Chef for the Wisco Hotel Group on Madison’s west side and most recently as the Executive Chef at the Blue Marlin.

You might see me, from time to time, participating in city bands and orchestras in Wisconsin and Oregon. I often serve as a chef coach and judge in educational culinary competitions in Eugene and Madison. I love checking out local wine and specialty shops and can be seen roaming the Saturday Farmers Market…

…After all, I am always seeking inspiration for that next great recipe!
