Crispy Slow Cooker Corned Beef

Wearing green, four-leaf clovers, and a warm pot of corned beef.  Just a few of the things that make St. Patrick’s Day one of our favorites!  Whatever you choose to wear (or drink) is completely up to you…but we found an awesome corned beef recipe that is both juicy and crispy.  It’s easy to prepare, and some of the ingredients are on sale this week.

Here’s your Fresh Madison Market shopping list:

3 pounds Open Acres corned beef brisket flats, with packet ($3.99/lb)

1 cups water , maybe less depending on size of slow cooker

3 cloves garlic , minced

1 bay leaf

2 tablespoons sugar

2 tablespoons cider vinegar

1/2 teaspoon ground black pepper

Your instructions:

Place corned beef, fat side up, in your slow cooker.

Add the minced garlic, spice packet, sugar and pepper to the top of the meat and rub on.

Next, add vinegar and bay leaf to the side of the corned beef and add just enough water to cover about a quarter of the corned beef brisket.

Cook on low for 8-9 hours.

To get it crispy,  put under a broiler (6-7 inches away) for 1-2 minutes (don’t leave the broiler unattended).
