An Easy Dish Under 500 Calories!

Putting a meal together that stays under 500 calories sounds like you’d be left with nothing but leaves and twigs.  Not this time.  This one is delicious and great for you, too.

Pork medallions are super easy to work with, and chefs will tell you that pork takes in flavors and seasonings like no other meat.  

To make this dish, originally found at Taste of Home, mix chicken broth, apple juice concentrate, and mustard in a small bowl.  Meanwhile, slice pork tenderloin into half inch medallions and brown them on both sides in a skillet. 

Remove the pork from the pan.  Then add garlic to the pan, and stir.  Add the broth mixture, and bring to a boil.  Let it simmer for about 6 to 8 minutes and reduce to about 1/3 cup.

Return the pork to the pan, cook over low heat and cover for 3 to 4 minutes.  Mix cornstarch and water until smooth, and add to the pan until thick (about 2 minutes).

Here are the ingredients you’ll want to have on hand:

 1/2 cup reduced-sodium chicken broth

2 tablespoons thawed apple juice concentrate

4-1/2 teaspoons stone-ground mustard

1 pork tenderloin (1 pound), cut into 1/2-inch slices

1/4 teaspoon salt

1/4 teaspoon pepper

1 tablespoon olive oil

2 garlic cloves, minced

1 teaspoon cornstarch

2 tablespoons cold water

1 tablespoon minced fresh parsley
