Grilled Barbecue Drumsticks
You might notice a theme this week at Fresh Madison Market. Everything you need to have a backyard picnic is on special! Bi-color sweet corn is 5 for $2. Seedless watermelon are just $3.99 each Fresh bacon spinach tomato pasta salad is just $3.99/lb. And you can get refreshing Coke and Coke products in a 6-pack for 3 for just $9. But the centerpiece of this epic picnic will be your grilled barbecue drumsticks.
Here’s what you’ll need:
• 30 chicken legs (Open Acres fresh chicken drumsticks are just 99 cents a pound in the value pack)
• 1 1⁄2 cups water
• 3 cups apple cider vinegar
• 1⁄2 cup olive oil
• 1⁄4 cup salt or seasoning salt, if you prefer
• 1⁄2 cup sugar
• 1⁄3 cup McCormick's steak seasoning
• 2 tablespoons pepper
• 5 -6 fresh garlic cloves
• 3 -4 sprigs rosemary, stripped from stem
• Your favorite barbecue sauce
Mix ingredients (minus the chicken) in a large bowl and then separate into plastic zip bags
Add chicken.
Chill and marinate for at least 4 hours, 12 hours for best results.
Grill chicken on a well-oiled grill until browned on all sides, turning only once, about 15 to 20 mins each side.
For best results, grill chicken without the cover.
In the last 5-10 minutes of grilling, liberally spread barbecue sauce on one side of chicken.
Then (if possible) place chicken legs on a top rack for indirect heat with the barbecue side of the leg down.
Spread the other side with barbecue and let caramelize for 5-10 mins on indirect heat. (Note: If you don’t have a top rack, just reduce this time to 3 to 5mins).
